Winemaking: Stony soil, 5000 vines per hectare, 2 kg per plant, severe pruning to keep theyields of this very generous varietals low. Early October harvest. 20 days fermentation in steel, with indigenous yeasts. The malolactic occurs in steel. 1 year aging in barriques and tonneaux not new, 1 year in the bottle before release.
