Winemaking: Clay and limestone soil, vines planted at 540 meters above sea level located in Lapio, ideal terroir for Fiano, trained in a spurred cordon system. 3,500 vines per hectare. Yields of less than 3 pounds per vine. Harvested the first week of October in the coolest hours of the day. After a soft pressing part of the juice ferments in new French barriques and part in stainless steel. Matures for 6 months in steel with frequent battonage.
