Chianti Classico

Appellation: Chianti Classico DOCG
Varietal: 100% Sangiovese
Winemaking: The soil is amix of clay, sand and limestone. Hand harvested in mid-September. Fermented in open stainless steel vats, with whole grapes, not pressed, obtaining a sort of micro fermentation for each berry. The maceration lasts for 25 days or so. The wine is then transferred in French barriques, 20% new where it ages for 14 months. Bottles without filtration or fining.
