Winemaking: High altitude vineyard in Montefusco, 700 meters above sea level, trained in a spurred cordon system. 4,000 vines per hectare. Clay and tuff soil. Yields of 2 and half pounds of grapes per vine. Harvested the second week of October in the coolest hours of the day. After a soft pressing part of the juice ferments in new French barriques and part in stainless steel. Matures for 6 months in steel with frequent battonage.
