Winemaking: Volcanic soil, rich in minerals, 100/300 meters above sea level After the hand harvest, the grapes are left to dry indoors for 4 months. After a careful manual de-stemming, the grapes are pressed, yielding around 20 liters of juice for every 100 kilos of grapes. Fermentation with indigenous yeasts takes place in new barriques and lasts roughly a year. Aged 2 years on the lees in the same barriques. Bottled without filtration.
